Introduction

more than choose pronouns , people are getting aware of the need to avoid the daily ease reached fast foods. Nutritionists are getting richer the last two decades. Brunches are healthier. Around the globe society is pressured to change eating behavior. Low classes with virtual information are getting instructed. 

The sweets, as you can already pressupost, on the food pyramids made in USA, for the excess of fat and sugar must be eaten a la mode, or, at few moments in low quantities, theses sweets are made with milk, eggs., and dairy products, though. For have been made with raw material rich in saturated fats, cholesterol LDL VLDL , and high glycemic index.

So eat Plant based can be an alternative due to not have theses biochemical rates.

An example would be the muffin made with spirulina agar, which tends to be dark green in color. Which is rich in B-complex vitamins, calcium, folic acid, polyunsaturated fatty acids and antioxidants that reduce the levels of bad cholesterol present in the arteries.

Farming producers, the local ones, 

use the organic way of planting. 

People are searching for more functional food. Wich is:

The functional food have biochemical properties wich turn up bodies metabolism.  Like food rich in fiber, cereals, seeds, wich help In digestion and cleaning the blocked fated arteries. 

Are food that have pre and probiotic functions, due to the riches nutrients they've got. 

Not only nutritional but also good microorganisms (lacto bacillus ) used to fermentation of the vegetal milk .

The combination of organic farming and functional bakery, is, in addition to an innovative market, also the solution to health problems, a source of income for small producers, and the reduction of the negative socio-environmental impact that products of animal origin, GMOs, monocultures, extensive agriculture, can cause.

Just replacing flavors and obsolete culture, a lot of changing around the world is right now being difunded and the future will looks like color green. 

Imaging cows, pigs, rabbits out of the cages, pasting like the fake milks package and people glad to not want their pieces in ovens.

 

A bit far for perspective, but doesn't cost nothing to daydream.

Danilo Souza

My name is Danilo Souza. I'm a vegan pastry chef.

I always loved to study food science (bromatology).

At high school's last year I became an agroindustry technician.

 My first formal job was in a laboratory of chromatography. We worked detecting pesticide's levels on cereals samples

 (ps. I spent almost the whole stage washing glassware and answering phone calls ).

I Started to be vegan one year later, in 2017, a decision I took initially for health reasons, because I suffered from anxiety and to be healthier, I tried to combine healthy eating with hiking (sports).That year I used to make and sell brownies on the avenues near where I lived. That was when my passion for cooking blossomed like a flower bud. 

 An year later (2018) I enrolled at the Federal University of Rio Grande do Sul (UFRGS) to study Biotechnology and eventually do a Master's degree in Nutritional Biology, but my body got rusty and I had to come live with my parents in Italy. 

started working in a factory that made artisanal cookies,  adventure that lasted two years.  

 while this period of time, I've been cooking vegan sweets, Sweets made with unhealthy ingredients, refined sugar,  white flour, oil, OGM soy milk.

Ps: this project is an upgrade for replacing all this ingredients for organic ones

Nowadays, my main reasons for being vegan and making vegan sweets are my love for sensitive beings (animals), the environment (the small ecological footprint that this lifestyle leaves), and also health. Still thinking about health, this project aims to produce macrobiotic sweets, with pre and probiotic nutrients.

In other words, I am going back in time to when I was in my hometown, with the intention of taking care of my health and producing sweets with meaning and nutritional, ecological and moral values
